INTRODUCTION


Mexican food is a reflection of our culture. Corn is the clearest example of that. The Mayas used it since ancient times. It was the symbol of their beliefs.



  
Nowadays Mexicans use it to prepare typical dishes which are eaten at nacional Celebrations. For Example:


-Tamales, are eaten on February 2nd(second), we celebrate Candelaria Day: It means Day of the Candles or Candle Mass. It is a Mexican celebration that is  a fusion of the Catholic influences and native Mexican tradition. On that day some families go to the church with images of little baby Jesus.



Another traditional dish is Pozole. This is very delicious, because it is spicy and thick. Some people think it is not healthy, but I think it is healthy because it contains vegetables, carbohydrates and proteins.

In Potzolcalli restaurants,  they prepare the best pozole. They have different kinds:

- one with pork
-one with chicken
-one with shrimp

And they also can have different colors like red or green depending on the ingredients.
The pozole can be eaten any day but especially on Independence Day, which is  September 16th. Usually Pozole is accompanied by tostadas, onion, radish, lettuce, and oregano.
